According to Jo Robinson, Dutch nationalism played some part in our decreased consumption of purple carrots and the increased production and consumption of orange carrots. Purple carrots contain more Anthocyanines, cancer fighting pigments that plants produce to protect itself. These are pretty tasty just roasted and lightly salted.
